Holiday Leftovers 101

Many families prepare a turkey (or chicken) each Thanksgiving, yet fail to plan to utilize the leftovers. Planning appropriately can help you extend your food dollar, decrease some cooking time, and decrease the stress of feeding those guests.  Adding an extra pound or two when purchasing your bird can make such a difference. Roasting a bird once and having a plan for the days to follow is a smart step. Sure turkey sandwiches dressed with left over cranberry sauce are great, but if you feel adventurous, try one of these recipes.

In the mood for Mexican, try the USDA’s turkey tostadas. A Cajun flair, turkey and sausage gumbo is another great option. Maybe Italian, how about turkey tetrazzini?

With family and friends visiting for the holiday, why not expand the menu to include something new while making the most of your food dollars by using the leftovers. Having a plan to utilize leftovers sets the guide for meal planning and decreases holiday stress.
